Wrap joint will try to get its hands around Ohio State campus market

OSU chef makes shift to place of his own near Clintonville
Bill Glover is ready to go public after nearly six years of serving private diners.
Glover, most recently executive chef of the Faculty Club at Ohio State University, is venturing out on his own with the Sage American Bistro, expected to open June 10 at 2653 N. High St., south of Clintonville in a building formerly occupied by the Kitchen Lounge.
"This was always on the back burner for me," Glover said. "I've researched and made offers on other places over the years. This one is a good fit, good demographics."
Glover wants to fill a niche between casual chains and some of the area's more upscale meal offerings. The food will be contemporary American, aiming for an upscale casual customer.
The menu will include appetizers, salads, pasta, steaks and seafood. One signature dish will be seared scallops with a blackberry sauce. The menu will be small, with a mix of eight salads and appetizers, eight entrees and five desserts, plus specials.
"We want to be accessible," Glover said. "We just want to give great food with great service."
Food checks are expected to average between $20 and $25, while first-year sales are projected at $650,000. The restaurant will seat around 60 patrons. Sage American Bistro will be open for dinner Tuesdays through Saturdays and for brunch on Sundays. Glover has no immediate plans to add lunch hours.
